Coin and network minimums (dust)
Every blockchain has a technical minimum for a viable transaction, called dust. These minimums are so small (fractions of a cent) that they don't affect real bookings. If a payment amount ever falls below dust, CoinGate would raise this at checkout - but in practice hotel prices always exceed it.
