The market at Las Dalias (Carretera de Sant Carles km 12, 07850) in the north of the island runs every Saturday year-round and on Monday and Tuesday evenings in summer (roughly 10 AM to 10 PM). It's less a tourist souvenir market and more a genuine countercultural fair - vintage clothing, hand-made jewellery, incense, ceramics, and live acoustic music in the central courtyard. Entry is free.
Las Dalias has been running since 1954 and reflects the bohemian side of Ibiza that attracted artists and writers in the 1960s and 1970s. For couples, the Saturday market is a genuinely enjoyable morning - street food stalls, live music, and handmade goods at prices well below Ibiza Town boutiques.
Pro Tip: The inner courtyard opens for the evening night market from 8 PM on Mondays and Tuesdays in July and August, with candle lighting and live musicians. This version of Las Dalias is quieter and more atmospheric than the daytime Saturday market and worth the 30-minute drive from Ibiza Town.
